CAPRESE SKEWERED SALAD

Using a cocktail stick, secure a piece of tomato, then a piece of basil, then a mozzarella ball and finally another piece of tomato.

Repeat with remaining ingredients.

Place on a serving dish and sprinkle with salt and pepper.

Mix the vinegar and oil together in a small bowl to serve as a dipping sauce, or simply drizzle over right before serving.

 

Ingredients for 8 portions:

 

- 20 cherry tomatoes, halved

- 20 fresh basil leaves

- 20 mozzarella bocconcini

- Balsamic vinegar 100ml (4 fl oz)

- 4 tablespoons extra virgin olive oil

- salt and freshly ground black pepper to taste

- 20 cocktail sticks
